I think he's asking about how to change the kernel of an existing
virtual machine without reinstalling it.
After installation is complete (i.e. on subsequent boots), Xen gets the
kernel/initrd information from the bootloader, so all you should really
need to do is upgrade the kernel from inside the virtual machine as if
it were any other kernel -- and restart the machine. The next time it
comes up, Xen should find the new kernel.
