I have seen NFS exhibit this behavior when a client that has file systems 
mounted changes IP without unmounting the filesystem first. After that 
happens, if you do anything with NFS, it causes the same kind of two-part 
freeze you describe, even to the point that a kill -9 won't work on the now 
confused process on the client. The only choice (In my experience) is to 
reboot the client. There might be a timeout, but if there is, it is very 
long. I don't think this is the cause in your case, but consider this a 
second vote for NFS getting confused by some not obviously related 
networking problem. Look at your hardware, that is the most likely culprit.
