Here's what I've found to work:

OpenOffice.org 1.1 wants to install to /opt/OpenOffice.org1.1.0

Instead point it to the current openoffice folder on K12LTSP at
/usr/lib/openoffice

In a terminal session as su, do a network installation (/.setup -net)
and let OOo1.1 do an in-place upgrade to the /usr/lib/openoffice
directory.

If I remember correctly, the K12LTSP autoresponse file will create the
new workstation install when a user first logs in after the network
install.  There will be 2 openoffice directories in the user's home
drive and 2 menu entries.  The user can delete the older of the
openoffice directories and the non-working openoffice menu entry.
