A GPL mathematics program is Octave:

I do not know how it compares to MathLab as I haven't used it.
It does seem to compare to Maple.

At work we do have Matlab in use on several different platforms,
including Linux. I do know for sure that there is a Linux version of
Matlab (just recently installed that on our Beowulf Cluster), and it
does have a command-line driven interface. However, I don't know any
details about the language in use to "program" Matlab, so I can not
really say if you will be able to do everything that is allowed by the
Graphical Interface. However, I guess, if you are good at matlab coding,
you probably can.
Just to give you an example, here is how Matlab starts:

I don't know anything about single user license pricing, but
I am afraid it is probably going to be a bit more expensive then the
usual non-free software.
