The polish locale is called pl_PL. On debian, you just need to install
the package called "locales", it will prompt you for the locale and
configure it. If it does not, just add
LANG=pl_PL
in /etc/environment.

In Debian, you can let the brltty package install some
/etc/init.d/brltty script and the corresponding /etc/rcS.d/Ssomethingbrltty
When installing the package, it will prompt you for a braille table, the
polish one (pl) is available.
