Two options:
(a) the old way: name your system objects after MAC addresses in the
Xen reserved space ... counting up from 00:16:3E:00:00:00
and provision with "koan --virt --system=<MAC> --server=cobbler.example.com"
(a) use cobbler/koan 0.5.0, where systems can be named anything ...
