I think the key is...

"-libvir: error : no support for hypervisor"

 From the above, it looks like you're getting an error from Xen or 
libvirt, rather than from something cobbler/koan related.

Are you sure you are installing a Xen kernel image vs a plain one?   Is 
xend running?   I'm really not super-up on libvirt error messages, so 
perhaps Dan/Hugh can field this.   You could always ask fedora-xen as well.
