I did this recently and had no problems with changing the server IP. I
presume you do have 
@@server@@
In your kickstarts/snippets instead of a hardcoded address. If not Its
time to sed all those files and swap it for that variable. With that in
place you only need to update it in the settings file for it to
propagate with a cobbler sync.
