Cyrus IMAP is designed with large sites in mind; there are organizations
using Cyrus to serve tens of thousands of mailboxes. It's also very
feature-complete as far as IMAP servers go.
2.2 is reported stable in beta now and would probably be the best
choice.
Dovecot appears to be a good choice when you've already got a large
installation with mbox or Maildir folder and don't want to try to
migrate.
