Would it be possible to put OpenSync (with plugins) in Extras?

Yes, sorry I actually pressed "send" instead of "save" on my initial post...

What I would like to see, is a Kitchensync version that is compatible
with opensync. AFAIK, the current Kitchensync does not make use of the
new framework.

Currently, in the opensuse yum repo [2], this is the info on the package:

Name : kitchensync-opensync
Arch : i386
Version: 0.01_SVN574743
Release: 2.7
Size : 297 k
Repo : OpenSync
Summary: Kitchensync - OpenSync integration branch
Description:
This is a version of Kitchensync using OpenSync as the synchronization
engine.

I have not been able to install this "kitchensync-opensync" on FC6, see [3].

Also, opensync is now available in version 0.20 (in extras I could
only find the 0.19 version)

(In particular, I would like to "yum install" everything needed to
sync my phone over bluetooth with KDE-PIM, and I believe that opensync
0.20 will make this possible.)

By the way, these refs should have been in my original post:
[1] OpenSync: http://www.opensync.org/
[2] Opensuse rpms: http://software.opensuse.org/download/OpenSync/Fedora_Core_5/
[3] Kitchensync-opensync build error: http://www.opensync.org/ticket/386
[4] Possible "--prefix" error: http://www.opensync.org/ticket/388

all the best
