I have what might be a workable solution. Set up a local repository
that you mirror manually or on a schedule you prefer from an official
repository mirror, and point all your auto updating clients at that.
Then you can choose exactly when updates get pushed out by modifying
the schedule that the local mirror is populated. Holiday coming up?
Turn off the mirror job.

As a bonus, you could even have different classes of clients, like
critical servers, backup servers, test boxes, and desktop systems, all
using different local yum repos. Do a staggered rollout to the local
yum repos, starting with the test boxes, moving up to desktops, backup
servers, and finally critical servers once everything is verified
working properly.
