why sendmail and not postfix?

No, at least MUAs like Evolution or Kmail which access a mailserver
remotely through POP3 or IMAP protocoll do not have to care about
maildir or mbox storage format on the server side. It's the job of the
mailserver like UW-imapd or Cyrus-imapd or Courier-imapd i.e. They are
the interface between what the user remotely sees through POP3 or IMAP
connects and what the server stores on his side.
