You don't even have to do that.  boot into single user mode (add 1 to
the end of the kernel line at boot and you are at a command prompt as
root.

Something to keep in mind regarding physical security of a box.  Any one
can get root with physical access to the box.  bios and bootloader
passwords help but all bets are off if the box can be opened.
