Check out gDesklets at http://gdesklets.gnomedesktop.org/.  Look in
System Info for various sensors to watch temp, fan speed, io, sys load,
etc.  

You can also use lm_sensor, http://secure.netroedge.com/~lm78/, for a
command line display.
