SpamAssassin.  But you need an interface between MTA and SpamAssassin. 
For Sendmail, you can use spamass-milter (very simple), Amavis (more 
complicated to install, but much more configurable) and MIMEDefang (most 
powerfull, but you need to learn at least basics of Perl to configure 
it).  The last two, in combination with ClamAV can provide you with 
anti-virus too.
