grub question

You can do exactly what you asked of, merely make duplicate entries in your 
grub.conf and append the line that begins with kernel with init x
where x is either 1 or 3. And just change the title to reflect the changes in 
init so you will be able to tell what you are booting into. IE
title Fedora Core Single-User Mode(2.4.22-1.2149.nptl)
	root (hd1,0)=
	kernel /vmlinuz-2.4.22-1.2149.nptl ro root=LABEL=/ hdd=ide-scsi hdb=ide-scsi 
rhgb vga=791 init 1
	initrd /initrd-2.4.22-1.2149.nptl.img
