IMAP and evolution

To restrict your view of the server to the ~/mail directory you need to 
specify a different namespace. To do this, in the receiving options dialog 
check the "Override server-supplied directory namespace" option and enter 
the new namespace in the text box. What you need to enter there depends on 
the imap server. Try ~/mail, if the imap server is sensible that should 
work. If not, try the absolute path to your mail directory.

There are other options with many strange and wonderous meta-characters, but 
try the simple ones first.
