I finally got it all sorted out.  I'm using the built-in KAME stack, 
along with OS X clients.  It wasn't even that hard.

I did a bit of reading, and got it sorted out in about an hour.  I 
tested using an iBook that was connected to the Internet via a GPRS 
dialup with AT&T Wireless.  That's a NAT'd connection, so I also know 
that the NAT-T code is working properly.
