It's much easier if you use KDE. Then you can simply use kmenuedit
KDE and Gnome now store their menus in the same place, according to the
freedesktop standard. However, I'm not sure what would happen if you run
kmenuedit while logged into Gnome - Gnome might keep a runtime copy of the
menus somewhere else. But it's worth a try.
