gvim is part of the vim-X11 package.

A useful command to do every now and then is:
[root at pe400 ~]# yum list >yum.list
[root at pe400 ~]# grep vim yum.list
vim-X11.i386                             1:6.3.030-3           installed
vim-common.i386                          1:6.3.030-3           installed
vim-enhanced.i386                        1:6.3.030-3           installed
vim-minimal.i386                         1:6.3.030-3           installed

It's nice to have a list of all available packages hanging around so you 
can search it for what you're looking for.
