Now that is really asking to start a "holy war" between proponents of
the two MTAs. Given that you're unfamiliar with both, despite the fact
that I'm a sendmail user myself and that sendmail is the default MTA on
Fedora, I'd suggest going to Postfix as it's easier to configure.

Configuration files *are* the easy way to configure things. GUIs tend to
hide things from you.

You need to better specify what you want to do with your mail server.
The MTA handles mail delivery (incoming and outgoing). You may also want
virus and/or spam filtering, which would be separate packages (e.g.
clamav & spamassassin), you'll probably also want a POP3 or IMAP mail
server (e.g. dovecot) so that your mail clients can read their mail
without having to log onto the mail server. You may also want webmail
access for travelling people (e.g. squirrelmail).
