It's a matter of preference. Postfix is modular. By many accounts is is
faster than Sendmail and certainly much easier to configure while
forfeiting nothing in the feature set.

If you insist, there are modules in Webmin but it's easier to work with
the config files.

You need a box with a HD and a NIC. Do the net a favor, though.
Thoroughly test the thing before you change your MX record. Make sure
that you do not create an open relay.
