I know it's bad form to reply to myself, but I just realized I
forgot to plug my favorite backup system here:

This stores backups on disk using a clever compression and
linking scheme to greatly increase the number of backups it
can hold and it provides a nice web interface to browse
the backups.  You can restore to the original location or
download single files or zip or tar archives through the
browser.  Keep this thing running and you don't have to
worry about the storage format because you can grab any
file over the network.  It can also dump archive copies
to tape or CD's but the real point is always having a week
or more history of live snapshots available instantly with
no manual intervention once you set it up.
