you can also use system-config-nfs.

(well documented in "Red Hat 9 Customization Guide - Chapter Network
File System", it even describes the problem you have in /etc/exports,
namely :
"If there are no spaces between the hostname and the options in
parenthesis, the options apply only to the hostname. If there is a space
between the hostname and the options, the options apply to the rest of
the world")
