I just checked, and the installer won't let you create a RAID without at
least two devices. So, unless I'm missing something, looks like a "no".

As I understand it SATA controllers are always always one device per
channel, even if it's the same controller. 

Meanwhile SCSI is designed so you can have a bunch of things talking on the
same cable at once without it being a big deal. You'll probably get better
performance than with SATA.
