I believe that gstreamer sits between gnome-sound-recorder and alsa.

arecord/aplay is working for me in FC3, and the limited success I had
with gnome-sound-recorder in FC3 is about the same level of success I
had in FC2 IIRC. (Check out my other posts in this thread)
