How can I Change the charset?

It really doesn't matter if you use ISO-8859-1 or UTF-8 as long as you
make sure information about which encoding you use is included along
with every web page. I'd recommend staying with UTF-8 since that is what
FC3 uses by default, and it should not be a problem to use it.

Start you XML documents with:

 <?xml version="1.0" encoding="utf-8" ?>

And use this inside <head> in HTML:

 <meta http-equiv="Content-Type" content="text/html;charset=utf-8" >
