right click of file open with

Okay ... I'm using Gnome on FC3:

To change file association, I can right-click on a file in my home directory "file.pdf" and select "Properties".

Among the six tabs across the top, I find "Open With".

You can click the radio button for the default application or add another application to the list and select it from the list.
