A better question would be which services to avoid on the open Internet. 
I'd avoid telnet, Samba, and NFS to start.

Don't deploy *any* service to the outside world until you understand its 
security implications and you've subscribed to the announce list for the 
group producing its package. Make sure you get notifications promptly for 
any security holes that are discovered.
