OS for a 64bit Xeon dual processor

Hi guys,
I have a 64bit Xeon dual processor. I am trying to decide which OS to put on
it.
I want it to be able to squeeze the most juice out of the hardware.
Can anybody tell me if FC4 or maybe even 3 is good for it. If not
what would you suggest I put on it?
