Shortcuts for applications in GNOME

Hello there,

isn't there a way to start an application using a keyboard shortcut in GNOME?
I would have expected this ability from the application's properties (when
added to a panel for instance). I couldn't imagine that there would be such
lack in the GNOME usability..

Any clue? What did I miss?
