It turned out that it was not a configuration problem at all, but a deliberate
change to the latest stable version of postfix, which removed a previously
existing patch responsible for displaying the hostname in the domain-name.
In case it helps archive-searchers, the antidote is to edit
the /etc/postfix/main.cf line
masquerade_domains = $mydomain
to read
masquerade_domains = |hostname.domain.tld (substituting your address of
course). The '|' tells postfix to NOT masquerade that address, IOW not to
hide the hostname.
