New drive already has vfat after new fdisk

Hi;
Just purchased a new Maxtor 200gig usb 2.0 device. Before plugging it
into the FC4 system, Windows was used to remove the windows partition.
Then plugged it into FC4, recognized it ok, ran FDISK and created 3
primary partions on it. Fdisk synced it and advised to reboot in order
to format it.
Here is fdisk -l on it (after reboot.)
# fdisk -l /dev/sda
Disk /dev/sda: 203.9 GB, 203928109056 bytes
255 heads, 63 sectors/track, 24792 cylinders
Units = cylinders of 16065 * 512 = 8225280 bytes

HOWEVER, the thing is ALREADY MOUNTED as ONE VFAT PARTITION! (Possibly
even before my fdsik. I did NOT format it, and I can create folders in
it.

I don't want vfat! Either ext3 or reiserfs, whichever is better for
database server. (advice?)
1. How did this happen?
2. How to fix it. (I sit broke?)
