I've done this before and used gcdmaster to mark the gaps in the wav
file I recorded for each side of the vinyl I was converting.  It
worked out fairly well.

I've also gone from vinyl to mp3 (::cough:: I mean ogg, heave forfend
I'd ignore the mp3 patent).  For that I didn't have any need to create
a CD so I used a wav editor to split the files and then I wrote a
little perl script that would use a cddb file to convert, tag, and
rename the wav files to mpg^H^H^Hogg.

I've read about some other programs that can help automate this, but
haven't used any of them (and don't have links handy).  Here's one
that's linked from linux-sound.org:
