$ rpmbuild --rebuild foo.src.rpm --define 'kvariants ""' --define 'kversion bar'

rebuilds "foo.src.rpm" for the single CPU kernel "bar". Instead of ""
you can also use SMP, Xen0, kdump or XenU (or combinations)
