I don't know about doing that directly, but it's possible indirectly.

Set the kernels to be ignored/excluded in your YUM configuration (see
man yum.conf so you don't get any mistakes from me trying to explain
it).  And subscribe to the fedora-package-announce list.  You'll get
e-mails about what's being updated, with information about the packages.
And you can selectively install kernels when you want to.
