grub, kernel and mount woes

The grub file which loads when this box boots isn't presently
accessible because it's not mounted.  I've installed and uninstalled
several OS's and have lost track of why, but I do know that when I go
to /mnt/sb3/boot and it's empty -- that's where the grub.conf is which
I need to edit.

The contents aren't really empty, they're just MIA.

Two approaches:

1.)  from GRUB I can enter the edit mode and using tab completion can
tell gentoo which kernel to boot with, but can't seem to make this
choice persist.  Once the GRUB file is edited in this interactive
mode, what's the next step to telling it to boot with the specified
kernel?

2.)  mount the appropiate /boot partition and edit the grub.conf file
therin.  How is this done, pls?
