To tell it the protocol to use. That way it knows the port on the
printserver, as well as the "language" to use. It is like using
http:// or ftp:// in a web browser. You use lpd://, ipp://, smb://,
etc in CUPS.

For example, I have:
DeviceURI ipp://192.168.1.101:631/ipp
and
DeviceURI parallel:/dev/lp0
for 2 of my printers in /etc/cups/printers.conf.
