If you run the default gdm, there is a login dialog box in the middle
of the screen where your eyes are focused as you are logging in.

Down on the bottom of the screen where you aren't looking at all,
there is a invisible list selection that appears only after you
have selected a user name and have a password prompt.

You can pick a different session from that list.

I don't know how many different sessions are available to be
installed from the repos, but the session all correspond to
files that are installed in /usr/share/xsessions/

If you have used your own ~/.xsession file since X first
appeared, you'll have to install xorg-x11-xinit-session
to get that option back - they saved a whopping 8K on the
distribution media by leaving that off :-).
