Hello T

Please dont give the pepper sauce recipe to anybody else as
Maman whose it is doesnt know I've shared it.
Here you are, since its been about a year since I made some you
may have to adjust the quantities to your taste:

Pepper sauce

A liquidiser / blender to made the sauce

30 Hot bell peppers (preferably Scotch Bonnet)

4 large Maggi cubes (increase to your taste)

3 tablespoons of groundnut oil

5 large cloves of garlic


Chop up your peppers and garlic to make it easier for them to liquidise.

Liquidise the peppers, garlic and Maggi on the highest speed.

Pour the oil slowly into the top of the liquidiser as it forms into a thick
paste.

Taste it, burn the roof of your mouth and add more Maggi or garlic if
needed!


Benichi (apparently not its real name but am not Gambian!)

4 ties of red sorrell (the stalks are red), picked and washed.

1 or 2 Scotch Bonnet peppers (to your taste)...

2 /3 Maggi to taste

Black pepper/Maggi seasoned fried fish.

4 small cups of white rice (Basmati or Thai Jasmine).

1 tbsp of salt.

1 large aubergine sliced lengthways. Lightly salted, fried and drained of
oil.

1 tbsp of groundnut oil.

Kaenda (very optional as most people won't eat this...).

1 medium sized rice pot.

Not sure how large your ties of green leaves are.
Boil about 4 cups of water and place immediately in your rice pot.

As soon as the water has started boiling on your stove add the sorrell.
Wash the rice and drain all the water from it.

When the boiling water has turned red drain all the sorrell and put aside.
Do not throw this water away as this is what you are cooking the rice with.

Add rice to the boiling sorrell water adding the oil and salt to taste, cook
as usual.
Add more water if needed.

When most of the water has evaporated place the sorrell, peppers, fish and
aubergine
on top of the rice and kaenda if you are that way inclined.
Turn the heat down so that these items steam cook.

When the rice is finished remove the sorrell and grain with pepper and Maggi
using
a spoon.

You are now ready to present your creation to the world!!!

Dish the rice into your most beautiful bowl and place all the accompaniments
on
top of it...including the kaenda if you have some mouthwash at home...if not
no kissing!!!
