For the lab, you'll want at least telnet & telnet server, gftp or ftp, 
ssh and sshd, an IRCd, MySQL*, Apache httpd, vsftpd, etc.
Have them setup an internet based cluster, GFS, or FDS.

As far as edutorial applications are concerned you might check the 
kdeedu package.
For stock FC games, check gnome-games package and kdegames package.
