have each one of them install in say /usr/share/foo_number1 and 
/usr/share/foo_number2 and create via alternatives a symlink named 
/usr/share/foo pointing to the one you want to activate at any given 
time. Handle any /etc/foo/config files similarly. Make sure you do not 
step on the other application's logfile either. Et voila, no more conflicts.
