Yes, the buildsystem defines it, as well as a few others, like %{dist}.  You 
can similate that via:
rpmbuild --define "fedora 5" -bb pulseaudio.spec

That said, package looks good, APPROVED.  Now I have to figure out this 
sponsorship thing. (:
