Mike,

Instead of just excluding the ppc arch could you try to use conditional blocks
like the one below:

...
%ifnarch ppc ppc64
%files sensors
%defattr(-,root,root,-)
%{_libdir}/nagios/plugins/check_sensors
%endif
...

I will attach a possible patch (not tested as I don't have access to ppc systems).
