I noticed the following in the build log:
  * checking for working latex ...sh: latex: command not found
   NO
Any idea if the lack of latex causes problems?

It seems you're not using the recommended template, which is OK, but...

If you're going to use macros like %{__rm}, you need to use them consistently,
which means using %{__install}, %{__chmod}, etc.
