Packages show up in the package selection area based on entries in the comps 
file. The comps file for the installer is created on the fly by pungi, but 
merging together the comps metadata out of all the yum repos used to create 
the spin. I've done some fairly extensive package selection changes myself by 
simply putting the comps file I wanted into a private yum repo w/my custom 
packages. Not sure if its particularly well documented anywhere, but its 
definitely doable. Google around for MythDora (version 5) to see an example 
of a modified F8 installer.
