edit /etc/X11/gdm/gdm.conf

and comment out the following line (put a '#' at the beginning of the line)

[servers]
0=/usr/bin/X11/X

so that it looks like this ;

[servers]
#0=/usr/bin/X11/X

Next time you reboot, you will see there is no X running on the server console.

If you would like to get rid of X on the server right away, you can force a reboot, or change to runlevel 3, and back to runlevel 5, like this ;

# init 3
# init 5

Be warned - this will kick all your users off !
