Liam,

My advice is to build another box with the SATA drives and network the 
two via NFS or SMB and move your data over only.  This way you get a 
clean install, and never go without being able to get to your data.

That's the way I would do it.  With PC hardware being so cheap, you can 
always relegate the old box to some other duties after moving over to 
the new one.

And stay away from Promise on the new box, go with 3ware RAID controllers.
