I've heard a lot of talk about XDMCP choosers, but my solution (over 
Christmas break) is going to be a round-robin DNS entry for the servers. 
  In the dhcpd.conf file, I'll point the clients to a dns name instead 
of an IP address, and split the load.

It may not be perfectly balanced, but it should be pretty close.  Also, 
failure should be transparent to the users because I'll just pluck the 
failed server from the round robin entry...

All that said, I'm still using 4.0.1 (FC1 I believe) and haven't seen 
any NFS issues, so I can't comment on that part.
