Usually you want to focus on stability on the server side (because
that functionality doesn't change much) and the latest apps on
the desktop side (because those are improving rapidly).  K12ltsp
is an odd beast in that one server provides both and the RH/fedora
versioning scheme keeps you from getting version upgrades of apps
within a distro release.  So, you probably want the fast-track fedora
base for the boxes providing the desktop apps and just live with having
to re-install at least once a year.

However, Centos 4.0 has just been released and is pretty close to being
as up to date as FC3.  I'd consider that as a very good choice for
an authentication/home directory server that you might want to keep
running for years.  Right now it would also be a reasonable choice for
an ltsp server providing destops since the apps are current.  You would
have to re-evaluate that choice in a year or so.  Even though you will
still have security/bugfix updates available, a year of development
brings a lot of improvement in app version upgrades that won't be backed
in.
